In March, we'll be enjoying mangoes

The star of the March harvest season is the mango. When a sweet, ripe mango is paired with onion, chili, lime, cilantro, and oil, the result is an easy and delicious mango salsa—a fresh side dish that goes well with many meals. Mango salsa pairs well with chicken, turkey, shrimp, or fish, for example, and can also be used as a filling for tortillas.

Did you know that the mango, which has spread to every corner of the world, is one of the most widely consumed fruits in the world? 

Mangoes are rich in potassium and magnesium and are a source of many vitamins, such as riboflavin, vitamins B6, A, C, and K, and folic acid. 

Mangoes grown in the tropics and carrots grown in Finnish fields have a lot in common. Both are rich in beta-carotene, which is a powerful antioxidant. Thanks to beta-carotene, these delicacies are also orange or yellow in color.

Easy, tasty, and healthy mango salsa:

Ingredients:

4 servings

  • 1 (540 g) Ripe mango
  • 1/2 (70 g) small red onion
  • 1 clove of garlic
  • 1 mild red chili pepper
  • about 1 tablespoon of lime juice
  • 1/2 tablespoon olive oil
  • about 1/4 tsp salt
  • a pinch of black pepper
  • 1/2 dl fresh cilantro, finely chopped
  • half a bell pepper

Manufacturing:

  • Peel the mango. Remove the pit by cutting the flesh away from the flat pit. Dice the mango into bite-sized pieces.
  • Chop the onions. Cut the chili in half, remove the seeds, and chop it finely. Chop the bell pepper into small pieces. Mix all the ingredients together and let the mixture sit in the refrigerator for a moment before serving. 

Serve the mango salsa with chicken or shrimp, for example, or spread it on a tortilla.
