Dark green and full-flavored kale is a versatile vegetable. Chopped kale works well in salads, stews, soups, and pies—and even as a crispy topping for pizza! You can also toss kale into pesto, dips, or smoothies.
Kale, which has become a huge favorite among health-conscious consumers, is a true superfood in terms of its nutritional content. Kale is packed with antioxidants and is rich in vitamin C, vitamin B2, carotene, calcium, and iron, among other nutrients. It also contains a surprisingly high amount of protein. The harvest season for kale—which boosts immunity—comes just in time in the fall, before the flu season begins.

Kale Chips
Kale chips are a trendy and healthy alternative to potato chips.
- Rinse the leaves and remove the woody stems. Cut the leaves into suitable pieces.
- Spread the leaves on a baking sheet lined with parchment paper. Drizzle oil over them and toss them so the oil is evenly distributed. Sprinkle salt on top.
- Bake on the middle rack of a 150-degree oven for about 20–25 minutes. Be careful not to burn the chips.
Kale Pasta
Kale goes well with all kinds of pasta. Make your favorite pasta dish and stir in some pieces of kale that have been sautéed in a pan.
Kale Salads
Kale salad is a wonderfully colorful and flavorful salad that can be served on its own as a vegetarian meal or as a side dish. Try making this salad with kale (1 bunch), red onion (1), bell pepper (1), and feta cheese (1 container).
- Slice the onion and bell pepper. Sauté them in a skillet for a couple of minutes. Add the kale strips and ½ dl of water. Stir and let simmer, covered, for 3–5 minutes.
- Add the feta cheese cubes. Season with white wine vinegar, pepper, and salt if needed. Serve as is as a vegetarian dish or as a side dish.
