Spring is almost here, and the sun is already nice and warm. Summer is still a little ways off, though, so while we wait for it, we can enjoy summery flavors in the form of a smoothie bowl. 

This sunny smoothie bowl gets its flavor from summery and exotic fruits, tart sea buckthorn, and invigorating ginger. The smoothie bowl is perfect for breakfast, a snack, or an evening meal. The bowl is rich in vitamin C, and you can easily meet your daily recommended intake of vitamin C by enjoying a sunny smoothie bowl. Plus, you’ll get healthy fats from the nuts, calcium from the yogurt, and carbohydrates from the fruit. The smoothie bowl also contains fiber. The fast-acting carbohydrates from the fruit provide energy even for intense workouts. 
 

Instructions for a Sunny Smoothie Bowl:

  • 1 dl diced mango (frozen)
  • 0.5 banana
  • the juice of 1 orange
  • 1.5 dl yogurt 
  • 1 tablespoon of sea buckthorn berries (frozen)
  • 0.5 tsp grated ginger
  • (water)

On:

  • 2 tablespoons of cashews
  • 1 tablespoon coconut flakes
  • mango cubes, orange, or banana

Put all the ingredients from the smoothie bowl into a blender and blend until smooth, or use a bowl and an immersion blender. For the yogurt, you can use plain yogurt, soy yogurt, or another type of yogurt product. Try coconut-flavored soy yogurt, for example. It’s best to grate the ginger beforehand so that it blends into the smoothie as evenly as possible. If the smoothie is too thick and doesn’t blend well, add a little water. The smoothie can still be a bit thicker, though, since it’s meant to be eaten with a spoon. 

Pour the smoothie into a bowl. Sprinkle cashews and coconut flakes on top. You can also garnish the bowl with banana or orange slices, or slightly softened mango cubes. When it comes to garnishing, the only limit is your imagination. Serve immediately and enjoy that summery vibe.
