Sea Buckthorn-Chiavanukas: An Antioxidant Powerhouse You Should Definitely Try!

Antioxidants are an important part of a balanced diet, and nutrient-rich berries, fruits, and vegetables are good sources of them. Antioxidants are compounds that can prevent oxidative reactions in our cells, thereby acting as a kind of defense mechanism for our cells. While our bodies do have an internal antioxidant system, antioxidants obtained from our diet have been found to have strong potential to support our internal defense system.

Fortunately, incorporating antioxidants into your diet is relatively easy, as long as you remember to eat a variety of colorful foods in abundance throughout the day. For example, locally grown berries are a great way to add flavor and nutritional value to your daily diet.

Sea buckthorn berries are an excellent source of antioxidants, including vitamin C and polyphenols. In addition to their antioxidant content, sea buckthorn berries contain unsaturated fatty acids and dietary fiber, both of which are beneficial to health. These little orange powerhouses add a boost to smoothies, porridge, juices, desserts, or even a simple chia pudding—you’ll find the recipe below. This recipe brings variety and color to the table, whether as a snack or as part of a lively breakfast.

Because of its slightly tart flavor, sea buckthorn berries may not be to everyone's taste, in which case you can substitute them with blueberries or blackcurrants in this recipe.

Sea Buckthorn-Chiavanukas

2 servings

  • 3+1 rkl chia seeds
  • 3 dl coconut milk
  • A pinch of unrefined sea salt
  • 200 g sea buckthorn berries
  • 1 tablespoon coconut palm sugar
     
  1. Let the sea buckthorn berries thaw for a few hours before preparing the puree. After thawing, pour off any excess water so the puree doesn't become too thin.

 

  1. Add the coconut palm sugar to the berries and puree them with a hand blender or in a blender. Stir 1 tablespoon of chia seeds into the berry puree and let it set in a glass jar for at least half an hour. You can also leave it in the refrigerator overnight.

 

  1. In a second glass jar, mix 3 rkl of chia seeds with coconut milk and sea salt. Let this sit in the refrigerator for at least half an hour or overnight. 

 

  1. Once the chia seeds have formed a gel, you can layer the puddings however you like and garnish with whole sea buckthorn berries. Enjoy!
